1kg mixed dried fruit
600ml choc milk
2 cups SR Flour

Soak fruit in milk overnight (or 6 hours in the middle of the day).
Mix in flour.
Bake in a 20cm round cake tin (I did a square tin, easier to cut). 180C for 1 hour 15 minutes or until cooked.

The top started to get a little too brown so watch it towards the end. May need to cover it with some foil depending on your oven.

I have also used ice coffee....and added a cup of choc chips. A friend of mine used juice instead of the flavoured milk.

Now that's an interesting fruit cake recipe - must give it a try.

If you make them in a square pan you can cut it into four mini cakes to give as gifts! Wink
