This recipe is for Jem Very Happy

4 or 5 rashers of bacon chopped
1 small tin of cream corn
1 onion choped
2 cups grated zuchini
1 cup grated cheese
1/2 cup of oil
1 cup self raising flour
4 eggs

Mix all ingredients together and bake for 40 mins at 180 degrees.

You can really add any vegie you like sometimes I do sweet potato instead of zuchini or pumpkin or add peas the list gors on and on really but just dont add mushroom because for some reson it wont set Confused

Hope you all enjoy it- a very easy no brainer tea with a salad!

I make it in muffin tins and they are great because you can trow them in the freezer and get one out when you want it for lunch and by lunch time it is thawed

Thanks for this, I'm going to give it a try. Very Happy

I always hated the cooked zucchini I was made to eat as a child (overcooked mushy zucchini Rolling Eyes ) so I never buy it now. But I have had this slice and am thinking it might be a good way to introduce a different veggie into our lives.
